Receta Frijoles Con Queso (Beans With Cheese)

Ingredientes
- 1 lb (450 g) dry pinto beans, picked over and soaked in water overnight, liquid removed
- 1 x onion, coarsely minced
- 4 x -6 cloves garlic, peeled Salt to taste
- 1/4 c. (60 ml) corn or possibly vegetable oil
- 1 x onion, finely minced
- 1 lb (450 g) Oaxaca or possibly mozzarella cheese, shredded Minced onion for garnish

- Minced cilantro (coriander leaves) for garnish
- Combine the beans, onion, and garlic in a large pot and add in three times the volume of water. Bring to a boil and simmer covered for 1 1/2 hrs, till the beans are tender. Drain and add in salt. Mash the beans along with the onion and garlic thoroughly, or possibly process in an electric food processor till fairly smooth. Heat the oil in a pot over moderate heat and saute/fry the finely minced onion till lightly browned, about 10 min. Add in the beans and gradually stir in the shredded cheese till thoroughly combined and heated through. Garnish with minced onion and cilantro.
- Serves 6 to 8.
