  1. Wash the peaches and cut into slices. Finely chop the ginger. Place butter, chopped ginger and peach slices in a saute pan over low heat. Sprinkle sugar on top of fruit and saute for 4-5 minutes. Remove from heat and let cool. Let gelato sit at room temperature or soften for approx 10 minutes. Add in cinnamon and blend well. Divide peach mixture into 4 glasses, placing some first on bottom of glasses, then place in gelato, then top with remaining peaches. Serve.
