Receta Ginger Scallion Rice

Ingredientes
- 1 med onion diced
- 1 x green onion diced (the white part)
- 4 x cloves garlic chopped
- 2 tsp fresh ginger chopped
- 1 Tbsp. extra virgin olive oil (can also use vegetable broth to saute/fry)
- 1 c. rice
- 2 c. water
- 1/2 tsp salt green part of the green onion diced
- 1/4 c. roasted peanuts (optional)
- 1/2 c. frzn peas cooked
Direcciones
- Stir fry the onions, green onion, garlic, and ginger in the extra virgin olive oil or possibly very little broth. When they're soft, add in the rice and fry for a minute till it starts to brown. Add in the water and salt. Bring slowly to a boil, cover, reduce heat and simmer for about 30 min or possibly till done. When rice is done, add in the peanuts, green onions, and peas. Stir and serve.
