Receta Go Lightly Banana Bran Muffins

Ingredientes
- 2 c. ripe bananas, mashed
- 1 1/2 c. All bran">Bran or possibly bran">Bran Buds cereal
- 2 c. oat bran flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 c. lite butter
- 1/4 c. sugar
- 1 egg white
- 1/2 c. egg beater
- 1/4 c. walnuts (optional)
Direcciones
- Can use 1 whole egg and 2 egg whites.
- Preheat oven to 350 degrees. Combine mashed bananas and cereal, mixing well. Allow to stand 5 min to soften cereal. In a large mixing bowl, combine butter, sugar and vanilla with mixer till smooth. Add in Large eggs and mix thoroughly. Add in banana mix and mix well. Stir in flour, baking pwdr, baking soda and nuts; stir till just blended. Don't OVER MIX. Measure 1/3 c. batter into 12 large muffin c. which have been sprayed with non-stick vegetable coating. Bake 20 min.
