Receta Golden Stuffed Baked Potatoes

Ingredientes
- 4 baked potatoes
- 1 c. grated raw carrots
- 1/4 c. parsley
- 1/4 c. chopped onion or possibly chive
- 1/2 teaspoon horseradish
- 2/3 c. yogurt or possibly lowfat sour cream
- 1/4 c. melted butter
- Salt & pepper to taste
- Grated cheddar cheese
- Paprika
Direcciones
- Halve baked potatoes and scoop out. Blend the scooped out potatoes with carrots, parsley, chives, horseradish, yogurt and butter. Season to taste. Refill potato halves. Top with cheese and paprika. Bake in 350 degree oven for 15 min or possibly till cheese melts. You can make filled potatoes ahead and chill. Top with cheese when ready to bake.
