Receta Goldie's Meat Loaf

Ingredientes
- 1 1/2 lbs. grnd beef, veal or possibly turkey
- Grated onion to taste
- Salt & pepper to taste
- 1/4 c. matzo meal
- 1 egg (or possibly 2 whites)
- 2 tbsp. warm water
- 1/2 pkg. onion soup mix
- 1 sm. can whole mushrooms
- 1 sliced or possibly slivered carrot
- 1/2 c. raw rice, soaked in cool water, then liquid removed
- 1/4 c. minced parsley
- 2 minced green onions
- 1 sm. can tomato juice
- 1 tbsp. water
- 2 tbsp. barbecue sauce or possibly catsup
Direcciones
- Put layer of rice on bottom of greased loaf pan. Sprinkle with parsley and green onions, salt and pepper. Add in onion soup, matzo meal, egg and warm water. Mix well and form loaf. Place on rice. Mix tomato juice with water, salt and barbecue sauce. Place carrots and mushrooms around meat loaf. Pour tomato juice mix over meat and vegetables. Bake at 325 degrees for 40 min, then reduce temperature to 300 degrees and bake for an additional hour or possibly till done. Serves 6.
