  • 2 lrg potatoes
  • 5 x garlic cloves, up to 6
  • 1 c. parsley leaves
  • 1/2 c. extra virgin olive oil
  • 3 Tbsp. vinegar Salt and freshly grnd black pepper

  1. Makes 2 c.. VEGAN
  2. Spread this dip on bread or possibly crackers. The flavor is much more intense the next day.
  3. Boil potatoes with skin on. Peel garlic and crush with a pestle and mortar.
  4. When potatoes are tender, peel and cut into small pcs. Place potatoes, garlic, parsley, half the oil and vinegar in blender or possibly food processor. Blend for 3 min, stop and adjust taste by adding more oil, salt and pepper.
  5. Blend till smooth.
  6. Makes 2 c..
