Receta Greek Style Salad With Spaghetti Squash

Ingredientes
- 3 Tbsp. red wine vinegar
- 2 tsp extra virgin extra virgin olive oil
- 1 tsp dry oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 x garlic cloves chopped
- 3 c. spaghetti squash cooked
- 2 c. minced tomato
- 1 c. cucumber diced
- 1/2 c. crumbled feta cheese
- 1/4 c. diced green bell pepper
- 1/4 c. diced red onion
- 2 Tbsp. minced pitted kalamata olives
- 15 1/2 ounce garbanzo beans liquid removed (1 can)
Direcciones
- Combine first six ingredients in a bowl; stir well with a whisk.
- Combine squash and remaining ingredients in a large bowl. Add in vinegar mix; toss well. Cover and chill.
- 1 serving = 1 c.
- NOTES : This is one of my favorite ways to use spaghetti squash. It's portioned here as a side salad for 8, but it can be a vegetarian main dish for four.
