  • 1 Tbsp. Fermented black beans rinsed and liquid removed of excess salt
  • 1 Tbsp. Chopped garlic
  • 1/2 tsp Fresh chopped ginger
  • 1 Tbsp. Vegetable oil
  • 1/2 lb Lean grnd pork
  • 1/4 c. Chicken stock
  • 1 lb Chinese green beans trimmed, blanched till tender
  • 2 Tbsp. Soy sauce
  • 2 Tbsp. Water
  • 2 tsp Cornstarch

Direcciones

  1. In a small bowl, mash the black beans into the garlic and ginger. In a large wok or possibly saute/fry pan heat the oil and cook the pork, stirring occasionally till all the pink is gone - about 10 min. Then add in the mashed fermented beans and stock, mix together and cook for 2 min. Add in the green beans, mix together and cook for 3 more min.
  2. Meanwhile, in a bowl mix together the soy sauce, 2 Tbsp. of water and cornstarch till they form a paste. While stirring, pour the cornstarch mix into the liquid in the bottom of the wok. The liquid will thicken as you toss the wok, coating the beans. Taste and re-season with salt and pepper if needed.
