Receta Green Beans with Tapenade dipping sauce
Ingredientes
- 11/2 pounds green beans, stem end trimmed
- olive oil { for sprinkling }
- salt to taste
- 12 oz pitted Kalamata olives
- 2 tablespoons capers
- 4 anchovy fillets
- 2 tablespoons fresh thyme
- 2 tablespoons olive oil

- fit a steamer in a pot with several inches of water. bring to a boil. have a bowl of ice water at hand. Add the green beans and cover. Steam for 4 minutes or until beans are bright green and cooked but still crisp. Transfer to ice water. Drain and pat dry.
- Arrange the beans on a platter and sprinkle with olive oil and salt.
- In a food processor, work the olives, capers, and anchovies until the mixture is coarsely chopped. Add the thyme and continue working until mixture is almost smooth. Now add the oil in a thin steady stream.
- Transfer the olive mixture to a bowl and serve as a dipping sauce for the green beans
