Receta Green Stuffed Baked Potatoes

Ingredientes
- 6 med. potatoes
- 3 stalks broccoli
- 1/4 c. lowfat milk
- 3/4 c. grated cheese
- 2 T butter
- 1 teaspoon salt
- 1/8 teaspoon pepper
Direcciones
- Butter skins and make shallow slits around the middle lengthwise. Bake till done. Steam whole stalks till just tender and chop fine. (The food processor works well for this). Slice potatoes in half and scoop insides into a bowl. I throw it in the processor with the broccoli. Add in 1/2 cup of cheese, the butter, salt, pepper and lowfat milk to the potatoes and broccoli. Blend well till mix is pale green. Heap into potato skins and sprinkle with remaining cheese. Return to oven and heat through. These freeze well and can be reheated in the microwave.
