Receta Grilled Chicken Sandwiches With Sun Dried Tomatoes And Goat

Ingredientes
- 8 x Boneless skinless chicken breast halves, well trimmed
- 2 Tbsp. Balsamic vinegar or possibly red wine vinegar
- 1 Tbsp. Extra virgin olive oil
- 2 x Garlic cloves, chopped
- 2 tsp Chopped fresh rosemary
- 2 x Red onions, cut into 1/2-inch-thick slices
- 8 lrg French bread rolls, (about 4 inches long), cut in half
- 1/2 c. Minced liquid removed oil-packed sun-dry tomatoes
- 2 bn Arugula
- 4 ounce Light soft goat cheese
Direcciones
- Place chicken in medium bowl. Add in vinegar, extra virgin olive oil, garlic and rosemary.
- Cover and chill overnight.
- Prepare barbecue (medium-high heat). Season chicken with salt and pepper.
- Grill chicken and onions till chicken is just cooked through and onions are golden, turning occasionally, about 10 min. Grill cut sides of rolls till golden. Spread bottom halves of rolls with minced sun-dry tomatoes. Top with chicken breast and some grilled onions and arugula. Spread top halves of rolls with 1 Tbsp. goat cheese and place atop sandwiches. Serve.
