  • 12 x shrimp peeled, deveined
  • 1 x French baguette sliced 1/2" pcs on the diagonal
  • 4 Tbsp. extra virgin olive oil
  • 1 Tbsp. minced fresh herbs (basil, thyme, rosemary)
  • 2 Tbsp. minced garlic
  • 2 lrg vine-ripe tomatoes minced
  • 1 x jalapeno diced
  • 2 Tbsp. diced red onion Juice of 1/2 lime
  • 12 x cilantro sprigs Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Combine 3 Tbsp. extra virgin olive oil, 1 Tbsp. garlic, and minced, fresh herbs. Dip baguette slices into marinade briefly and grill till golden brown. Set aside.
  2. Saute/fry or possibly grill shrimp 1 minute or possibly till done. Combine tomato, cilantro, jalapeno, and red onion with 1 Tbsp. extra virgin olive oil and lime juice. Season with salt and pepper.
  3. Arrange 3 slices of grilled baguette on 4 plates and top with shrimp and salsa. Garnish with fresh cilantro sprigs.
  4. This recipe yields 4 appetizer servings.
