- 1 med Eggplant, pared and cubed
- 1 lrg Onion, minced
- 1/4 c. Butter or possibly margarine
- 1 c. Applesauce
- 2 c. Diced ham
- 1/2 tsp Sage
- 1/4 tsp Salt
- 1 c. Seasoned bread crumbs
- 2 Tbsp. Butter, melted
Direcciones
- Mix eggplant, onion and butter in a 3 qt casserole. Cover with plastic wrap. Microwave at high (100%) till onion is tender, 9 to 10 min, stirring once during cooking time. V Add in applesauce, ham, sage and salt Combine bread crumbs and melted butter. Sprinkle over top. Microwave at high (100%) till eggplant is tender, 4 to 5 min.
- Makes 6 servings.
