This recipe was published in the food section of the Columbus Dispatch "Classic Corner" on January 6, 2010. Alice L. Gosztyla of Gahanna Ohio wrote that she found this recipe in an unusual cookbook called First Ladies Cookbook: Favorite Recipes of the President of the United States. It was listed as Harry S. Truman's favorite recipe. He liked it served with mashed potatoes, gravy and peas. I've made it twice and it is very good! It is very similar to my Mother's and Grandmother's recipe.

  1. Preheat oven to 350 degrees.
  2. Butter a loaf pan.
  3. Combine beef, egg yolks, parsley, 2 tablespoons butter, bread crumbs, chili sauce, salt, pepper and onion juice.
  4. Mix thoroughly.
  5. Place in prepared pan.
  6. Combine remaining 1/2 cup butter with boiling water.
  7. Brush over loaf.
  8. Bake meatloaf 1 hour, brushing frequently with butter mixture.
  9. To serve, heat tomato sauce,
  10. Cut meatloaf into slices.
  11. Serve with tomato sauce on the side.

    I used 1 pound meatloaf mix (beef, pork, and veal) and 1 pound ground beef. I have used one whole egg in place of 2 yolks. I melt the 2 tablespoons of butter before mixing with meat mixture. The remaining 6 tablespoons are added to 3/4 cup of boiling water for basting. I also grate 1/2 a small onion, instead of just onion juice. We also eat this with ketchup. Makes great sandwiches the next day!
