Receta Hearty Italian Bean Soup

Ingredientes
- 1/4 lb Ham, cooked, cut into 1/2
- 2 x Celery stalk, diced
- 2 x Carrot, medium, minced
- 1 x Onion, medium,minced
- 1 x 8 Oz zucchini, diced
- 2 x 15 Ounce. Can white beans
- 1 Tbsp. Extra virgin olive oil
- 1/2 tsp Basil
- 1/4 tsp Pepper
- 1 can (16 ounce) tomato, stewed
- 1 can (14 ounce) chicken broth
- 1 c. Spinach, fresh, minced
- 1 dsh Parmesan cheese, grated
Direcciones
- 1. Remove 1 1/2 c. white kidney beans to medium bowl; mash beans till smooth with a potato masher or possibly fork.
- 2. In 5 quart. pot, heat extra virgin olive oil, ham, celery, carrots, onion, zucchini, basil, and pepper till veggies are tender and begin to brown, about 15 min.
- 3. Stir in stewed tomatoes, chicken broth, minced spinach, mashed white beans, and 2 c. water, use spoon to break up tomatoes; heat until boiling.
- Reduce heat, cover, and simmer 15 min to blend flavors. Stir in remaining beans; heat through.
- 4. Sprinkle with parmesan cheese and serve.
