  • 1/4 c. oil
  • 1/4 c. flour
  • 1 lg. stalk celery, coarsely minced
  • 1 sm. green pepper, coarsely minced
  • 2 med. cloves garlic, finely minced
  • 1 env. Lipton onion or possibly onion-mushroom recipe soup mix
  • 4 c. water
  • 1 can (14 1/2 ounce.) whole peeled tomatoes, liquid removed and minced (reserve liquid)
  • 1 pkg. (10 ounce.) frzn whole baby okra, thawed and cut into 1 inch pcs
  • 1 teaspoon grnd cumin
  • 1 teaspoon thyme leaves
  • 1/4 teaspoon warm pepper sauce
  • 1 bay leaf (opt.)
  • 1 pound uncooked med. shrimp, cleaned
  • 1 tbsp. finely minced parsley
  • Salt and pepper to taste
  • Warm cooked rice

Direcciones

  1. In large saucepan or possibly stockpot heat oil and cook flour over medium-high heat, stirring constantly, 10 min or possibly till deep reddish brown. Stir in celery, green pepper and garlic. Cook, stirring occasionally, 6 min or possibly till vegetables are tender. Add in onion recipe soup mix, water, tomatoes, reserved liquid, okra, cumin, thyme, warm pepper sauce and bay leaf.
  2. Bring to a boil, then simmer uncovered 40 min. Stir in shrimp, parsley, salt and pepper. Simmer an additional 5 min or possibly till shrimp are tender. Remove bay leaf. Serve over warm rice. Makes 8 servings.
