Receta Hearty Split Pea Soup

Ingredientes
- 2 c. split peas
- 1 ham bone
- 6 c. water
- 1 c. minced carrot
- 1/2 c. minced onion
- 1/2 c. minced celery
- 1 tbsp. butter
- 1/4 c. minced celery leaves
- 2 tbsp. minced fresh parsley or possibly 1 tbsp. parsley flakes
- 2 teaspoon salt
- 1 teaspoon basil
- 1/4 teaspoon allspice
- 1/4 teaspoon thyme
- 1 bay leaf
- 2 c. minced raw spinach
- 1 c. frzn green peas
Direcciones
- Place split peas in large soup pot with ham bone. Add in water. Saute/fry carrots, onion and celery in butter till tender. Add in to pas. Add in remaining ingredients except spinach and green peas. Bring to a boil; cover and simmer 30 min. Add in spinach and green peas, simmer 30 more min. Remove ham bone and bay leaf.
- Variation: After cooking, soup may be pureed in blender if smooth consistency is preferred.
