Receta Honey Peach Muffins

Ingredientes
- 3/4 c. all-purpose flour
- 3/4 c. cornmeal
- 1 tsp baking pwdr
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 c. reduced-calorie margarine softened
- 1/4 c. honey
- 8 ounce lowfat peach yogurt
- 1 x egg white
- 1/2 c. liquid removed canned peaches in light syrup coarsely minced

- 1. Heat oven to 375F. Spray bottoms only of 12 muffin c. with nonstick cooking spray.
- 2. Lightly spoon flour into measuring c.; level off. In large bowl, combine flour, cornmeal, baking pwdr, baking soda, cinnamon and salt; mix well.
- 3. In medium bowl, combine margarine, honey and yogurt; beat at low speed till well blended. Add in egg white; beat well. Add in to flour mix; stir just till dry ingredients are moistened. Gently stir in peaches. Spoon batter proportionately into sprayed muffin c..
- 4. Bake at 375F for 17 to 23 min or possibly till tops are golden and toothpick inserted in center comes out clean. Immediately remove from pan.
