  • 1 1/2 lb Skinless, boneless chicken breasts (cut in strips, no more than 1/4" wide)
  • 1 whl med. size white onion, cut into strips or possibly diced
  • 2 Tbsp. Red chile pwdr
  • 1 tsp Curry pwdr
  • 1/2 tsp Grnd cumin (optional)
  • 1 x Pressed garlic clove (or possibly 3/4 teaspoon garlic pwdr)
  • 1 tsp Salt (salt to taste if you like)
  • 1 tsp Lemon and pepper, or possibly 1 teaspoon grated lemon peel (optional)
  • 3/4 c. Water (or possibly wine)
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Vegetable oil

Direcciones

  1. Recommended Fillings & Wrapper: Flour Tortillas, Cheddar Cheese, Tomatoes Lettuce, Onion, Salsa.
  2. Preparation: In glass or possibly stainless steel bowl combine all ingredients except extra virgin olive oil and vegetable oil. Mix thoroughly to spread spices over chicken, water should be completely absorbed, chill for 1 hour. After refrigeration add in Extra virgin olive oil, and stir till chicken is well coated with oil, spice aromas will be noticeably lighter.
  3. Heat Vegetable oil in non-stick pan, and add in mix, frying on medium heat. Cover till water has separated from chicken, and is boiling.
  4. Leave uncovered, on low heat, to simmer till almost all water has evaporated. Total cook time is less than ten min, don't overcook.
  5. Place prepared mix in center of flour tortillas, add in cheese and other fillings as desired (suggestions above). Mix in half, or possibly roll like burrito. Top with beans or possibly spanish rice.
  6. Serves 4-6.
