  • 8 x Large eggs Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. oil
  • 1 sm onion finely minced
  • 1 x tomato seeded, minced
  • 3/4 c. diced canned or possibly cooked nopalitos see * Note

Direcciones

  1. * Note: Use canned nopalitos, available at well-stocked grocery stores, or possibly packaged fresh nopalitos, found at Latino markets. Fresh nopalitos should be precooked till tender.
  2. Beat Large eggs with salt and pepper to taste. Heat oil in large skillet over medium heat. Add in onion and saute/fry till almost tender, about 3 min.
  3. Add in tomato and nopalitos and cook 2 min. Add in Large eggs and cook till set, stirring gently to combine.
  4. Dish onto plates and accompany with beans and tortillas.
  5. This recipe yields 4 servings.
