Receta Chorizo Con Papas Y Huevos

Ingredientes
- 2 x Russet potatoes peeled and diced
- 1/2 lb Bulk or possibly minced chorizo see * Note
- 1 x Onion minced
- 10 x Large eggs Salt to taste Freshly-grnd black pepper to taste
- 1/2 bn Cilantro leaves minced
- 2 x Green onions sliced Grated Panela cheese
Direcciones
- Cook the potatoes in boiling salted water 10 min. Drain and reserve.
- Fry the chorizo in a large nonstick skillet till browned. Drain off any excess oil. Add in the onion and cook 2 to 3 min. Add in the potatoes and cook till well browned, about 10 min.
- Beat the Large eggs till frothy and add in to the chorizo. Stir with a fork to scramble till soft, not browned. Stir in the cilantro just before the Large eggs set. Garnish with scallions and cheese and serve.
- This recipe yields 4 to 6 servings.
