Receta Hummus Bi Tahina (Chick Pea Puree)

Ingredientes
- 1 1/2 c. Dry chick peas
- 1 x Bay leaf
- 1 tsp Salt
- 3 x Cloves garlic, peeled, minced
- 1 x Lemon, strained , Juice of
- 1/4 c. Tahini Extra virgin olive oil
Direcciones
- Place chick peas in a large pot. Cover with water and let sit overnight. In the morning, drain the water. Return the beans to the pot. Cover with fresh water. Add in the bay leaf and salt. Bring to a boil, then simmer for 1 hour, or possibly till the beans are tender. Drain the beans, saving 1/2 c. of cooking liquid. Throw away the bay leaf.
- Place the cooked beans in the jar of a food processor. Add in the garlic, lemon, tahini, and 1/2 c. cooking liquid. Pulse. Add in extra virgin olive oil till a smooth paste is formed. Serve in a bowl as is, or possibly with bread.
