Receta Ice Cream Blueberry Muffins

Ingredientes
- 1 pt Vanilla ice cream, softened
- 2 c. Self-rising flour
- 3 Tbsp. Sugar
- 1/2 tsp Cinnamon
- 1 1/2 c. Blueberries, rinsed, liquid removed
Direcciones
- Combine ice cream and flour, stirring till batter is smooth and thick.
- Mix sugar with cinnamon; set aside 1 Tbsp.. Sprinkle remaining mix over batter. Gently mix in blueberries.
- Fill greased or possibly paper-lined muffin c. 2/3 full with batter. Sprinkle with reserved cinnamon-sugar mix.
- Bake at 400 degrees for 20-25 min.
- Makes 12 muffins.
