Receta Island Sweet Potato Pudding

Ingredientes
- 12 ounce Cooked sweet potatoes, peeled and cut in chunks
- 1 med Ripe banana, mashed
- 3 tsp Brown sugar, firmly packed
- 2 Tbsp. Reduced calorie margarine, +
- 2 tsp Reduced calorie margarine
- 1/4 tsp Grnd nutmeg,
- 1 tsp Rum extract,
- 1 x Egg white,
Direcciones
- Preheat oven to 350. In a large bowl, beat all ingredients except egg white till smooth. Add in a small amount of water if necessary, to get a smooth consistency. Beat egg white till stiff. Fold gently into sweet potato mix. Spoon into a casserole which has been sprayed with a nonstick cooking srpay. Bake, uncovered, 45 to 50 min, till lightly browned.
