Ingredientes
- 1 x Leg of boar Fat ham for larding Butter
- 1 x Onion sliced
- 1 x Carrot minced
- 1 x Celery rib minced
- 1 lrg Parsley sprig minced Salt to taste Freshly-grnd black pepper to taste
- 1 c. White wine
- 1 c. Stock
Direcciones
- Lard a leg of boar with strips of fat ham. Brown in butter with onion, carrot, celery rib, parsley sprig, and salt and pepper. When browned, pour on white wine and cook for 2 min. Add in stock. Cover and simmer very gently for 3 hrs.
