Receta Jalik (Cucumber Soup)

Ingredientes
- 4 x cucumbers
- 1 1/2 tsp salt
- 2 clv garlic, chopped
- 2 Tbsp. lemon juice
- 6 c. yogurt
- 1 Tbsp. finely minced dill
- 1/4 c. sesame or possibly extra virgin olive oil
- 2 tsp minced mint
Direcciones
- Peel the cucumbers, cut in quarters lengthwise, scoop out the seeds, then slice thin. Sprinkle with the salt and let stand 15 min.
- Drain well. Stir together the garlic, lemon juice, yogurt, and dill.
- Mix with the cucumbers. Pour the oil over the top and sprinkle with the mint.
- Serves 6-8.
