Receta Jerked Chicken Salad

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 1 x juice of one lime
- 1/2 c. minced chives
- 1 tsp chopped garlic
- 1 1/2 Tbsp. jerk spice black pepper
- 4 x boneless chicken, breast
- 1 x red pepper
- 1 x green pepper
- 6 c. frisee
Direcciones
- In a small bowl stir together extra virgin olive oil, lime juice, chives, garlic, jerk spice, and black pepper to taste.
- Rub mix into chicken breasts. Place in resealable plastic bag and chill for 3 hrs.
- Preheat grill to medium high. Oil racks. Place peppers on grill and cook, turning frequently for 10 min or possibly till blackened, blistered and tender. Remove from grill, place in bowl covered with plastic wrap (or possibly in resealble plastic bag), and let sit for 10 min to loosen skin. Remove skin and seeds, and cut peppers into strips. Reserve.
- Grill chicken at medium heat for 6-8 min, turning once, till golden brown and cooked through. Remove from heat and let sit for 10 min. Cut crosswise into strips.
- Arrange mixed greens on a platter and place chicken and pepper slices on top.Serve hot or possibly cool.
