Receta Jerusalem Artichoke Fritters

Ingredientes
- 1/2 lb Jerusalem artichokes scrubbed, dry
- 1 x green onion trimmed, minced
- 1/3 c. chopped red pepper
- 2 Tbsp. flour
- 1/2 tsp sea salt
- 1/2 tsp herbes de Provence
- 1/8 tsp cayenne - (to 1/4)
- 2 x Large eggs lightly beaten
- 5 Tbsp. peanut oil
Direcciones
- Grate the artichokes into a mixing bowl. Add in green onion, red pepper, flour, salt and spices and toss to mix. Stir in Large eggs and mix well.
- Heat the oil till the surface ripples in a large skillet over medium-high heat. Scoop the batter by Tbsp. into the skillet and flatten with a spatula. Fry till the batter is crisp and brown, about 2 min on each side. Drain on paper towels while repeating with the remaining batter. Serve warm.
- This recipe yields 4 servings.
