Receta Kaeng Masaman Thai Islamic Curry Beef

Ingredientes
- 7 x dry chilies
- 2 Tbsp. coriander seed
- 1 Tbsp. cumin seed
- 1 Tbsp. shredded ginger
- 1 x bruised lemongrass
- 1 tsp seasalt
- 5 x black peppercorns
- 1/4 tsp shredded nutmeg
- 1/2 tsp terasi, (shrimp paste)
- 2 Tbsp. oil
- 8 x shallots
- 6 x cloves garlic
- 3 lb beef (or possibly chicken, duck, pork)
- 4 c. coconut lowfat milk
- 150 gm roasted peanuts, briefly grnd
- 1 Tbsp. fish sauce
- 5 x cloves
- 2 x inches cinnamon
- 1 tsp cardemom
- 1 Tbsp. lemonjuice

- Method:Heat the oil and fry the shallots and garlic until it is golden. Add in the fried shallots and garlic to the other ingredients in the foodprocessor and make into a paste.
- Cut the meat into pcs and put them in a pan with the coconutmilk. Add in the peanuts and the fishsauce. Bring to boil, lower the heat and cook for approximately 1 hour until the meat is nearly done. Add in the prepared paste, cloves, cinnamon and cardemon and cook until the meat is tender. Take out the meat and cook the sauce till it becomes thicken.Add in the meat again and bring to taste with extra fishsauce, lemonjuice and palmsugar. Heat a few min and serve with Thai pandan rice.
