  1. fry the onions, garlic, ginger, peppers, in olive oil, tell lightly cooked.
  2. add cooked chicken chunks, cilantro, spices, lime juice, coconut milk and hot sauce simmer for about 10 mins take off of heat add a little salt and pepper to taste. cook quinoa, or rice and add to the chicken,coconut mix and add about 1/4 cup per beet leaf or kale leaf roll up and place in a deep pan. bake about 30 mins in the oven.. mmmmm serve with a nice salad and enjoy
