Receta Katies Chicken Durango
A spicy, delicious and easy recipe that I came up with after having a similar meal at a local restaurant. Takes very little time to prepare and according to my kids is real "go for " food.
Preparation time: 30 minutes
Ingredientes
- 1 lb. chicken breast sliced in 1/2in strips or
- John Souls Foods Chicken Fajitas
- 1- 4oz can mushrooms and stems
- 1 jar Classico 4 cheese Alfredo Sauce
- 1/2 jar milk
- 4 cups shredded pepper jack cheese
- 1 cup rice (uncooked)
- 2 cans Ro Tel diced tomatoes and green chilies (mild)
- 8-10 flour tortillas
- 1 tbsp. Coconut Oil
- 1/4 to 1/2 cup water as needed while cooking rice
Direcciones
- Rinse rice to remove starch and place in rice steamer
- Add 2 cans diced tomatoes and green chilies (Add water as needed) (Takes 20-30 minutes cooking time)
- In Sauce pan - Add Alfredo sauce, milk and pepper jack cheese, stir frequently to prevent burning until cheese is melted.
- Place Coconut oil in large skillet and heat until melted.
- Add Chicken fajita slices
- Cook for 5 minutes or until chicken is tender and browning.
- Drain mushroom and add to chicken
- Pour melted Alfredo and cheese mixture over chicken
- Simmer on low until rice is ready
- Serve rice and chicken mixture alone or with warm flour tortillas
