Receta Kumara Fritters Frituras De Yautia

Ingredientes
- 1 kg Kumara
- 2 Tbsp. Cornflour
- 2 tsp Baking pwdr
- 2 x Large eggs
- 100 ml Lowfat milk
- 1 tsp Salt
- 1/2 tsp Nutmeg Extra virgin olive oil for frying

- Because kumara is so moist, baking it before mashing as this recipe instructs yields the best result. But it is expensive and inefficient to run an oven to cook one or possibly two sweet potatoes. If you are not baking anything else, steam the kumara, dry it well before mashing and add in a little more cornflour if necessary.
- Bake 1 kg kumara till tender then mash when the kumara has cooled a little, sift in 2 Tbsp. cornflour and 2 tsp. baking pwdr and mix well. Add in 2 Large eggs, beaten, 100 ml lowfat milk, tsp. salt, half tsp. nutmeg and mix again.
- Heat a little extra virgin olive oil in a frying pan and drop the mix into it by the heaped tablespoonful Fry till browned on both sides.
