Receta Lemon Chicken Soup
I spent some time trying to make a chicken lemon soup that tasted similar to one from my favorite restaurants that I think you can figure out on your own.
Ingredientes
- 2 tbls olive oil, divided
- 1 lbs boneless, skinless chicken thighs, 1" chunks
- Salt, pepper to taste
- 3 cloves of garlic, minced
- 1 onion, diced
- 3 carrots, peeled, diced
- 2 celery stalks, diced
- 1/2 tsb dried thyme
- 5 cups chicken stock
- 2 bay leaves
- 3/4 cups uncooked orzo
- 1 sprig rosemary
- juice of 3-5 lemons (it depends on how lemony you like it)
- 2 tbls fresh parsley leaves
Direcciones
- Hear 1 tbls of olive oil in a Dutch Oven over medium heat.
- Season thighs w/salt, pepper to taste. Add to pot and cook till golden. 3-5 minutes per side. Set aside.
- Add remaining oil. Add garlic, onion, carrots and celery. Cook until tender.
- Stir in thyme until fragrant. About 1 minute.
- Whisk in chicken stock and 1 cup of water. Bring to a boil.
- Stir in orzo, rosemary, chicken. Reduce heat, simmer until orzo is tender. 10-12 minutes.
- Stir in Lemon juice. Salt to taste. Pick ou rosemary stems. Serve.
