Receta Lemon Raspberry Streusel Muffins

Ingredientes
- 2 c. flour
- 1/2 c. sugar
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 ctn lemon yogurt, lowfat 8 ounces
- 1/2 c. oil
- 2 x Large eggs
- 1 tsp lemon peel grated
- 1 c. raspberries, fresh or possibly frzn unthawed
- 1/3 c. sugar
- 1/4 c. flour
- 2 Tbsp. butter or possibly margarine

- Heat oven to 400 . Grease 36 miniature muffin c..* Lightly spoon flour into measuring c.; level off. In large bowl, combine 2 c. flour, 1/2 c. sugar, baking pwdr, baking soda and salt; mix well. In small bowl, combine yogurt, oil, lemon peel and Large eggs; mix well. Add in to dry ingredients; stir just till dry ingredients are moistened. Gently stir in raspberries. Fill greased muffin c. 3/4 full. In small bowl, combine 1/3 c. sugar and 1/4 c. flour. Using pastry blender or possibly fork, cut in margarine till crumbly. Sprinkle over batter. Bake at 400 for 11 to 13 min or possibly till light golden and toothpick inserted in center comes out clean. Cold 5 min; remove from muffin c.. Serve hot.
- Yield: 36 mini muffins.
- TIP:* Recipe can be baked in regularmuffin c.. Grease bottoms only of 14 muffin c. or possibly line with paper baking c.. Fill greased muffin c. 3/4 full. Bake at 400 for 18 to 20 min.
