Ingredientes
- 1/2 c. reduced-fat ricotta cheese
- 1 c. nonfat plain yogurt
- 2 Tbsp. red wine vinegar
- 1/4 c. capers, rinsed
- 3 Tbsp. fresh chives
- 2 Tbsp. fresh parsley
- 1/2 x yellow onion, rough minced
- 4 x cloves garlic
- 3 Tbsp. fresh basil
- 1/4 c. Dijon mustard Salt and pepper, to taste
- 1 head romaine lettuce washed and torn into small pcs Capers and croutons as garnish, (optional)

- This dressing gets its tangy flavor from capers and garlic instead of the usual anchovies. Using low-fat ricotta and yogurt instead of oil keeps it creamy and light.
- In blender, puree all ingredients except lettuce till smooth. Toss dressing with lettuce and garnish with additional capers and croutons if you like.
- Makes2 1/2 c. dressing or possibly 6 c. dressed salad.
