Receta Lime Melon Chutney

Ingredientes
- 1 1/2 c. sugar
- 1 1/2 c. white vinegar
- 2 Tbsp. minced preserved ginger
- 4 lrg clv garlic -- minced
- 2 tsp mustard seeds
- 1 tsp salt
- 1/4 tsp crushed red chile pepper
- 8 c. cantaloupe peeled and cubed (about 3-4 melons)
- 1 1/2 c. golden brown raisins
- 1/2 c. fresh lime juice (about 4 limes)
- 1/2 c. minced walnuts
- 1 Tbsp. grated lime peel
Direcciones
- Mix first 7 ingredients in a large heavy saucepan. Boil gently for 5 min. Add in the next 3 ingredients and cook over medium heat, stirring often, about about 1 hour, till mix is consistency of jam. Remove from heat and stir in last 2 ingredients. Ladle into warm, sterlized half-pint jars and seal. Process in a boiling water bath for 15 min. Cold and store in the refrigerator after opening.
