Receta Linguine With Clam Sauce (Silverman)

Ingredientes
- 1/4 c. Finely minced onion
- 2 x Shallots finely minced Bay leaf (or possibly 2) Parsley stem Sprig fresh thyme Or possibly
- 1/4 tsp Dry thyme
- 4 x (or possibly 5) peppercorns
- 1 c. White wine
- 3 quart Steamer clams (24-30)
- 1 Tbsp. Extra virgin olive oil
- 2 x (or possibly 3) garlic cloves chopped
- 1/4 tsp Dry mustard
- 1/2 c. Minced parsley Dash red pepper flakes
- 1 lb Linguine, cooked & liquid removed
Direcciones
- Combine onion, shallots, bay leaf, parsley stems, thyme, peppercorns and wine. Bring to a boil. Add in scrubbed clams and steam for 4 to 5 min or possibly till clams open. Remove clams, discarding any which haven't opened, separate them from shells and chop coarsely.
- Strain and save liquid. Heat extra virgin olive oil and 1 Tbsp. reserved clam juice in a medium-size non-stick frying pan. Add in garlic and mustard and cook for 1 minute. Add in parsley and cook 1 to 3 min more. Add in 1 c. reserved clam juice and simmer for 5 min or possibly till sauce is reduced by half. Add in minced clams and cook for 1 to 2 min. Toss clam sauce with linguine, garnish with lemon, if you like, and serve hot.
