Receta Linguine With Clams And Wild Mushrooms

Ingredientes
- 6 Tbsp. Extra virgin olive oil
- 1 lb Mixed fresh wild mushrooms, (such as oyster mushrooms and shiitake, stems trimmed, caps sliced)
- 6 lrg Garlic cloves, chopped
- 1/4 tsp Dry crushed red pepper
- 1 c. Dry white wine
- 5 lb Clams, (about 24 littleneck)
- 1 lb Linguine
- 2 bn Fresh chives or possibly 1 bunch green onions, minced
Direcciones
- Heat 3 Tbsp. oil in heavy large Dutch oven over high heat. Add in mushrooms and saute/fry till beginning to brown, about 5 min. Using slotted spoon, transfer mushrooms to plate. Add in remaining 3 Tbsp. oil and garlic to Dutch oven. Saute/fry till garlic is tender, about 3 min.
- Add in crushed red pepper, then wine and clams. Cover and cook till clams open, about 8 min.
- Meanwhile, cook linguine in large pot of boiling salted water till just tender but still hard to bite.
- Drain pasta well and transfer to large bowl. Spoon mushrooms over, then top with clam mix, discarding any clams which don't open. Season with salt and pepper. Sprinkle with chives.
- Serves 4.
