Receta Linguine With Clams And Wild Mushrooms

Ingredientes

  • 6 Tbsp. Extra virgin olive oil
  • 1 lb Mixed fresh wild mushrooms, (such as oyster mushrooms and shiitake, stems trimmed, caps sliced)
  • 6 lrg Garlic cloves, chopped
  • 1/4 tsp Dry crushed red pepper
  • 1 c. Dry white wine
  • 5 lb Clams, (about 24 littleneck)
  • 1 lb Linguine
  • 2 bn Fresh chives or possibly 1 bunch green onions, minced

Direcciones

  1. Heat 3 Tbsp. oil in heavy large Dutch oven over high heat. Add in mushrooms and saute/fry till beginning to brown, about 5 min. Using slotted spoon, transfer mushrooms to plate. Add in remaining 3 Tbsp. oil and garlic to Dutch oven. Saute/fry till garlic is tender, about 3 min.
  2. Add in crushed red pepper, then wine and clams. Cover and cook till clams open, about 8 min.
  3. Meanwhile, cook linguine in large pot of boiling salted water till just tender but still hard to bite.
  4. Drain pasta well and transfer to large bowl. Spoon mushrooms over, then top with clam mix, discarding any clams which don't open. Season with salt and pepper. Sprinkle with chives.
  5. Serves 4.
