  1. Bake potatoes for 45 min in 400 degree oven till tender. Scoop out inside of potatoes, leaving 1/4 inch of potato in skin. Set aside. In skillet, saute/fry onion and garlic till transparent, in about 2 Tbsp. butter, add in mushrooms, saute/fry 3-5 min. Meanwhile chop lobster meat into bite-size pcs. Add in to saute/fry mix, saute/fry about 3 min, till it's heated through, turn burner to medium high, add in the vermouth, cook till vermouth boils down. Set aside. Meanwhile, add in lowfat sour cream to potatoes and hand mash together, add in the cheddar and Gruyere cheese, mix together, add in plenty of fresh-grnd pepper, add in beaten egg, add in the lobster mix, blend together, add in scallions and 1/4 c. of Parmesan. Stuff potatoes with mix, sprinkle with remaining Parmesan cheese. Bake in 350 degree oven till golden, about 15 min.
