  2. CAKE Peel and cut up apples. Put in a medium sized bowl and sprinkle 2 c. sugar over them. Toss lightly, being sure to coat each apples piece. Set aside while you sift the dry ingredients together. Toss the sugar and apples once more. Stir in Large eggs which have been lightly beaten with the vanilla. Add in dry ingredients to apples, blending well. Mix in nuts.
  3. Reserve I Tbsp. to sprinkle on top of Icing. Pour into a greased 9" x 13" baking pan. Bake at 350 for 35 to 45 min. Cold
  4. ICING Combine softened cream cheese, applesauce and cinnamon. Spread on cooled cake. Sprinkle with minced macadamia nuts.
