Receta Manhattan-Style Clam Chowder

Ingredientes
- 1 lb pork bacon
- 8 cups Spanish onions
- 8 cups sliced carrots
- 8 cups sliced celery
- 8 each bay leaf
- 2 Tbsp red pepper flakes
- 2 Tbsp dried tarragon
- 4 cans tomatoes, diced
- 8 cans chopped clam and juice
- 3 cups diced potatoes
- 8 oz parsley
Direcciones
- In a tilt grill, cook bacon over medium heat until fat is rendered.
- Add onions and saute until translucent.
- Add carrots and celery and stir to coat.
- Add bay leaf, red pepper flakes, and tarragon.
- Cook vegetables and seasonings until tender.
- Add tomatoes and clam juice.
- Bring to a simmer.
- Add potatoes and simmer until tender, about 20 minutes.
- Add parsley and clams.
- Simmer for 10 minutes and serve.
