Receta Marinated Alaska Pollock Appetizer

Ingredientes
- 1 lb pollock fillets thawed if necessary
- 3/4 tsp grated lemon peel
- 1 x red or possibly green pepper thinly sliced
- 1/2 c. thinly-sliced onion rings
- 1 Tbsp. lemon juice Salt to taste Freshly-grnd black pepper to taste Lettuce Lemon wedges
- 1/4 c. dry white wine
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. chopped parsley
- 1 tsp lemon juice
- 1/4 tsp crushed rosemary
- 1/4 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1 dsh bottled warm pepper sauce
- 1 pch sugar

- Combine all marinade ingredients. Mix well. (
- Makes about 1/3 c.)
- Cut pollock into 1-inch chunks. Pour Marinade over fish and let stand 20 min.
- Remove fish from marinade and sprinkle with lemon peel. Microcook, covered, at High (100%) 2 min. Turn fish, add in pepper and onions, drizzle with marinade and rotate dish 1/4 turn; microcook at High 2 to 3 min or possibly till fish flakes when tested with a fork. (Recipe developed for 600 to 700 watt microwave ovens.)
- Sprinkle with lemon juice; mix gently. Salt and pepper to taste. Chill till completely chilled.
- Arrange pollock and vegetables on lettuce-lined platter. Garnish with lemon wedges.
- This recipe yields 4 to 6 servings.
