Receta Marinated Boneless Pork Slices with Rice

Ingredientes
- 3 lbs. sliced boneless pork
- Marinade:
- 1 ½ cups ginger ale
- 2 inch piece of fresh grated ginger
- Juice of 1 lemon
- Zest of 1 lemon
- Juice of 1 lime
- Zest of 1 lime
- 4 cloves of garlic â chopped
- ½ cup vinegar
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1 tsp. salt
- ½ tsp. black pepper
- 1 tsp. sugar
- For the Rice:
- 2 cups uncooked rice
- 1 red onion â sliced
- 1 ½ cups frozen corn
- 1 grilled jalapeño â sliced with seeds
- 4 cloves garlic â chopped
- ½ cup dried pineapple
- ½ cup dried cranberries
- 2 stalks celery â chopped
- Handful of fresh basil â chopped
- ½ tsp. ground coriander
- ½ tsp. ground cumin
- ½ tsp. salt
- ¼ tsp. black pepper
- ½ tsp. brown sugar
- Olive oil for drizzling
- Combine for the Rice:
- 1 tablespoon sugar
- ¼ cup vinegar
- Dipping Sauce:
- 1 cup of ketchup
- 1 grilled jalapeño â chopped
- 1 inch piece of fresh ginger â grated
- 2 cloves of garlic â grated
- 1 tablespoon of brown sugar
- Dashes of ground cumin
- Dashes of cloves
- 2 tablespoons of vinegar
Direcciones
- Combine all of the above in a bowl and stir.
- Process:
- Combine all of the ingredients for the pork marinade and place the sliced pork in the marinade. Refrigerate for at least one hour or longer.
- Heat a griddle and place the pork slices on the hot griddle to grill.
- For the Rice:
- Cook the rice in a rice cooker or as directed.
- Heat a large frying pan with a drizzle of olive oil.
- Add the onions, celery, garlic and grilled jalapeño. Sauté until the onion is soft.
- Add the pineapple and the cranberries. Add the cooked rice and the seasonings and toss.
- Combine the vinegar and sugar and add and toss.
- Add the fresh basil and again toss.
