  1. Cut onion in half width wise, remove the skin, then slice very thin. (approx 1/8"-use a mandoline if available)
  2. Lay out the onions in a nonreactive container
  3. Season onions with salt and juice of two limes.
  4. Mix until well incorporated.
  5. Let the onions sit for about 1/2 hour to marinate.
  6. When onions are ready, they will be a beautiful deep pink color.

      I had a dinner party this weekend with a mexican theme. We had pork carnitas tacos and these onions went very well. It was a large crowd so I made a double batch and there were no leftovers! So easy and fantastic!

          I tried to make these a couple of weeks ago. I think I messed up using a tupperware dish instead of a glass making dish. It was still good but never got bright purple :-/ I love these so I will try again.
