Receta Marinated Root Vegetable Salad With Citrus Dressing

Ingredientes
- 6 med beets
- 2 med carrots
- 1 sm turnip
- 1 1/2 tsp paprika
- 1/4 tsp grnd cinnamon
- 1/4 tsp grnd cumin
- 2 Tbsp. orange-juice concentrate
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. extra virgin olive oil Salt and freshly grnd black pepper, to taste Lettuce leaves for garnish Minced parsley for garnish

- MAKES 4 SERVINGS. VEGAN
- Preheat oven to 450 degrees. Wrap scrubbed and/or possibly peeled root vegetables in aluminum foil; place on baking sheet. Bake till tender, about 1 hour.
- While still hot, cut vegetables into eighths. Toss with paprika, cinnamon, cumin, orange-juice concentrate, lemon juice and oil. Cover: let stand 1 hour at room temperature to marinate. Season to taste with salt and pepper.
- Line platter with lettuce leaves and mound salad in center; garnish with minced parsley.
- Makes 4 servings.
