  • 6 med beets
  • 2 med carrots
  • 1 sm turnip
  • 1 1/2 tsp paprika
  • 1/4 tsp grnd cinnamon
  • 1/4 tsp grnd cumin
  • 2 Tbsp. orange-juice concentrate
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil Salt and freshly grnd black pepper, to taste Lettuce leaves for garnish Minced parsley for garnish

Direcciones

  1. MAKES 4 SERVINGS. VEGAN
  2. Preheat oven to 450 degrees. Wrap scrubbed and/or possibly peeled root vegetables in aluminum foil; place on baking sheet. Bake till tender, about 1 hour.
  3. While still hot, cut vegetables into eighths. Toss with paprika, cinnamon, cumin, orange-juice concentrate, lemon juice and oil. Cover: let stand 1 hour at room temperature to marinate. Season to taste with salt and pepper.
  4. Line platter with lettuce leaves and mound salad in center; garnish with minced parsley.
  5. Makes 4 servings.
