  • 1 Tbsp. Olive or possibly vegetable oil
  • 2 med Zucchini, cut into 3/4-inch dice
  • 1 med Onion, diced
  • 2 tsp Chopped garlic
  • 1/4 tsp Salt
  • 1 can (28 ounce.) crushed tomatoes
  • 1 Tbsp. Wine vinegar
  • 1 tsp Sugar
  • 1/4 tsp Oregano
  • 1/4 tsp Freshly grnd pepper
  • 1 can (6 1/2 ounce.) water-packed tuna, liquid removed
  • 1 pkt (12 or possibly 14 ounce.) corkscrew or possibly ruffle pasta, cooked according to pk Directions Freshly grated Parmesan cheese (optional)

Direcciones

  1. 1. Heat oil in large skillet over medium-high heat. Add in zucchini, onion, garlic and salt; cook, stirring, till tender-crisp, 5 min. Stir in tomatoes, vinegar, sugar, oregano and pepper. Bring to boil; reduce heat, cover and simmer 5 min. Stir in tuna and cook 3 min more.
  2. 2. Toss warm pasta with sauce and sprinkle with Parmesan, if you like.
  3. Makes4 servings.
