- Nonstick vegetable oil spray
- 1 lrg red onion cut into 1/4" wedges
- 2 med zucchini sliced diagonally
- 2 x yellow crookneck squash sliced diagonally
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. minced fresh thyme
- 1 tsp extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Preheat oven to 400 degrees. Spray large baking sheet with nonstick spray. Toss onion and next 5 ingredients together on prepared baking sheet; spread in single layer. Sprinkle with salt and pepper.
- Bake vegetables till tender and brown around edges, stirring occasionally, about 35 min.
