Receta Mexican Chorizo Breakfast Pie
Flour tortillas are the foundation of this egg, cheese, and chorizo pie. Serve with salsa and fresh tortillas.
Ingredientes
- 3-6 flour tortillas
- 1/2 lb. chorizo, cooked
- 1 small onion, diced
- 2-3 cloves chopped garlic
- 1 tbs. olive oil
- 6 large eggs
- 1/2 cup milk
- 1/2 tsp. each ground cumin, chili powder, oregano
- 2 cups shredded cheese, divided
- 1/2 cup smashed tortilla chips
- 1/4 cup chopped cilantro
- salt and pepper to taste
- garnish: paprika
Direcciones
- Heat oven to 375 degrees.
- Layer bottom and sides of a 9 inch pie plate with the flour tortillas.
- Cook the chorizo, drain.
- Saute the onions and garlic in the olive oil.
- Beat eggs with milk, add all other ingredients to the eggs, keeping back 1 cup cheese,
- Place the pie plate on a baking sheet, then fill the pie plate with the egg, cheese, chorizo mixture.
- Bake 35-45 minute, check if center is done.
- When done, cut off oven, sprinkle cheese and paprika on toop of the pie, leave in the oven 10 minutes.
- Let cool 10 minutes before serving.
