Receta Mexican Skillet
A quick cooking Mexican dish that really stretches the use of 1 pound of ground beef.
Ingredientes
- 2 Tbsp olive oil
- 1 lb ground beef
- 1 large onion
- 2 tsp chipotle chile powder
- 1 14oz can tomatoes, salsa-style-fire-roasted-diced
- 1 14 oz can black beans
- 2 small yellow squash, diced
- 1 small head of cabbage, shredded
- Juice of two limes
- salt, pepper
- shredded cheese, for topping
- greek yogurt, for topping
Direcciones
- Heat olive oil in a non-stick skillet. Add onions and beef, mix well. Add chipotle powder, dask of salt and pepper, and cook for 7 minutes.
- Add diced squash, black beans, and tomatoes. Mix well. Cook another 7 minutes.
- Toss shredded cabbage with lime juice, salt, and pepper. This can be done while everything is cooking. Longer it sets, the better it gets.
- Place cabbage slaw on your plate. Top with beef mixture. Top with cheese, and a dollop or two of greek yogurt. You can also use sour cream.
